Clean Eating: Double Berry Oatmeal Bake

When I first starting eating clean, I was worried about giving up great tasting foods, especially breakfast. After some extensive research, I found that I didn’t have to make any real sacrifices and could prepare meals ahead of time for a busy week. This Double Berry Oatmeal bake was originally found on Broke and Bougie, and since I’m not a huge fan of bananas, I was encouraged to make some changes and got incredibly, delicious results!

Here’s what you’ll need:
-A 9×13 baking pan
-Non-stick baking spray (Coconut oil baking spray was my choice)
-2 cups of Old Fashioned Oats
-2 Tablespoons of cinnamon
-1 teaspoon of baking powder
-1/2 Pure Maple Syrup Grade B
-1 ½ cups of blueberries (washed)
-1/2 cup of sliced strawberries (washed)
-1 cup of walnuts, chopped
-2 cups of unsweetened Coconut Milk (You may use unsweetened Almond Milk as well)
-3 tablespoons of AllWhites egg whites
-1 tablespoon of Vanilla Extract

First, preheat your oven to 350 degrees. Next, combine the oats, cinnamon, syrup , baking powder, half of the walnuts, and 1 cup of the blueberries in a large bowl.

Grab another bowl to mix your egg whites, vanilla, and milk. Make sure that your vanilla and egg whites are completely stirred in.

Thoroughly spray your baking pan with non-stick spray, not neglecting the sides.  Afterwards, evenly spread the oats mixture into the pan (it will rise once you bake it). Now, grab your milk combination and pour it in directly on top of the oats mixture, making sure that it’s evenly soaked and covered. Give the pan a little shake to accomplish this task.

Finally, top your future breakfast with the remaining blueberries, sliced strawberries and walnuts. Feel free to add more or less depending on your preference, it will turn out just fine!  Bake for 35-40 minutes and let it cool before you cut into it.

For the week, I normally cut the bake into squares and store them in Tupperware in my refrigerator for a quick, lazy breakfast that only takes 50 seconds in the microwave to get me fueled up for the day.
